Intro and need some assistance

Hello, what an incredible site this is.  It has been over 10 years since I last got my sewing machine out, hence the reason I found your site.

I'm in school training to become and Orthopedic Technologist.  I have to create a career poster board for my field.  I want to create a bent arm and straight leg, that I can than use to put a cast and a splint on.  Our area of display is only on a table top that we will have a 3' high x 4' long presentation board. 

I was first thinking I would use a nylon socking, (women's hose) and slip over my own arm (or Husbands if I can hold him still for that long) and the sew around the finger.  Then stuff it.  I'm not sure what to stuff it with, and after reading a little here I'm not wondering if I should make it out of material or maybe canvas.

So you more experienced seamstress, what suggestions might you have?
