Stow, Massachusetts, where our offices are located, is famous for its apple orchards, and Assistant Editor Barbara Delaney takes full advantage of this local bounty with her delicious apple cake.
Pre-heat oven to 350 degrees and grease a 13″ x 9″ pan.
2 C. flour
1 C. sugar
2 tsp. baking powder
1/2 tsp. salt
Cut in 2 T shortening until mixture resembles coarse meal. Spread mixture into the greased pan and arrange 4 C. of sliced apples on top. Combine 1/2 C. sugar and 1 tsp. cinnamon and sprinkle over the top of the apples. Drizzle 2 T. melted butter over all.
Bake for 35-50 minutes.
